    Even though we can provide certain kinds of seafood for all, or most, of the year, they are not always at their very best. Crab is meaty for a limited period, burbot is best caught in cold water once it is fully fed, crayfish has, as we all know, its own season - even if the increasing amount of farming can sometimes change the old, reliable rules for us gourmets and fishmongers.
