seafood here of the highest quality, our seafood counter varies with
the changing seasons of the sea and the life within it.
Even though we can provide certain kinds of
seafood for all, or most, of the year, they are not always at their
very best. Crab is meaty for a limited period, burbot is best caught
in cold water once it is fully fed, crayfish has, as we all know,
its own season - even if the increasing amount of farming can sometimes
change the old, reliable rules for us gourmets and fishmongers.
